The dough is made with a gluten-free flour mix, sugar, pasteurised eggs, soy drink instead of milk, olive oil, unsweetened cocoa and «pisto»: coriander, cinnamon, cloves and nutmeg. Chocolate makes up 50% of the mostacciolo.
